Ebleskiver (Æbleskiver)

This is one of Pia's favorite treats. Ebleskiver are similar to donut holes made out of delicious, fluffy pancake batter with a lemony, spicy twist. You can eat them for breakfast or for a snack.

Ingredients
  

  • 3.5 c. flour
  • 2 T baking powder
  • 2 c. milk
  • 2 c. buttermilk
  • 4 eggs separated
  • 1.4 t. cardamom
  • 1 lemon grated, zest
  • 2 T sugar
  • 1 t. salt
  • 1/2 c. butter melted
  • Few T powdered sugar for dusting

Method
 

  1. Mix Flour and baking powder. Gradually add milk and buttermilk, beating constantly. Add egg yolks while beating.
  2. Add caramom, grated lmeon zest, sugar and salt. In a separate bowl, whip egg whites until stiff peaks form, then fold into the batter.
  3. Brush ebleskiver pan with a little butter (or oil) and heat pan on the stove. Add about 2 T of batter to each cup (until almost full).
  4. When the aebleskivers begin to bubble around the edges, use a skewer or chopstick to flipit.
  5. When golden brown, transfer to a serving plate and dust with powdered sugar.
